Recipe: Luscious Lemon Scones

Sorry that it's been a while since I've posted - I'm moving temporarily to NYC (for two months) this upcoming Wednesday and it's been chaotic sorting out housing issues on both ends. 

But now it's sorted, I've stuffed impossibly much stuff into one straining-at-the-seams extra large suitcase, and there's time for a little procrastibaking before I finish packing up my room for my time away from Boston.

This brings us to:

Lemon Scone Recipe

Lemon scones! They're great with a lemony glaze, whipped cream and lemon curd, and/or served with tea. 

They're quick to whip up, ready within thirty minutes from the time that you step foot in the kitchen (assuming you don't take a power nap in there), and only use ingredients that are found in most kitchens, anyway. It's the perfect baking on a whim recipe!

Recipe: Lemon Ricotta Bars

The holiday baking season has officially begun! I love baking at any time of the year, but especially at Christmastime. It's so fun to make something from scratch, fill it with love, and share it with people I care about!

The holiday season is not only a time to make friends and loved ones smile, but also to try to be a bit kinder to everyone. I think that spirit of goodwill should include other animals, too! That's why I like to bake with free range eggs.

Recipe Roundup: The Best of Autumn

In what feels like just a week, summer magically transformed into autumn!

The leaves, dressed in autumnal yellows and oranges and red, lie on the ground. Tote bags of apples are at the entrance of every supermarket (um YUM). I need a sweater in the mornings and evenings! And sometimes I don't wear a sweater and just rock the pretty fall dresses and pretend I'm not cold.

Spring Flavors: Honey Ridge Farms Artisan Honeys!

Springtime makes me think of flowers, sunshine, twirly dresses, my birthday, and the sticky fingers of childhood. I'm not sure what it is about honey (perhaps the association with bees and flowers and all things happy and sweet?) but honey is such a spring food to me!


I recently tried two new flavors, Honey Creme Coconut and Honey Creme Lavender, from Honey Ridge Farms!


While liquid honey is great for sweetening tea, I prefer honey cremes as a topping on toast for a peanut butter and honey sandwich (or on cream cheese, as in the photo above). It's a lot less messy (making it much more suitable for the adult, less sticky me), spreads easily, and just looks really nice - like spreading gold quartz on bread. Yum!

Review: New Crazy Richard's Pure PB

I'm a legume-loving vegetarian and a huge fan of peanut butter. HUGE. 

Peanut butter is awesome with so many things! For starters:

* Bananas
* In smoothies
* Chocolate
* Sandwiches
* In savory dishes
* In sweet desserts
* On ice cream
* On a spoon...

You get the point. Peanut butter is pretty awesome. The delicious spread has also come a long way from its humble beginnings in 1895! In addition to a large variety of different flavors for peanut butter spreads, there are also variations on peanut butter for all sorts of different dietary needs.

Healthy Habits with Farmivore

I love smoothies! They're delicious, packed with healthy fruits (and potentially veggies), convenient if you need a snack or light meal on the go, great at any time of the day, easy to digest, and a perfect way to cool off on a hot day or hydrate on a day where you've been less diligent with water consumption than ideal. 

I love adding spinach to a fruity, banana-based smoothie for a delicious, easy way to get in my daily greens!


Smoothies can also be a component of one of my favorite new 'trendy' foods:


Smoothie bowls! I love them, especially acai and pitaya bowls. I had my first bowl in Hawaii and while the ones I make at home (see above) are nowhere near as amazing as those were, they're still delicious! I'm working on it.

One of the biggest challenges I face in smoothie making is the same as I do in cooking and baking in general. As a single girl, it can be hard to buy produce in amounts that you'll use before they go off if you want a lot of variety. I don't like wasting food, so I'm more likely to sacrifice variety in order to buy just what I can use, than to buy a big range of fruits and veggies at once so that i can experiment with smoothie flavors. 

Fortunately, I don't have to decide anymore! I recently discovered Farmivore, a delivery service that provides you with fresh smoothie ingredients straight to your front door in portions that are practical!

Kitchen Hacks for the Renaissance Woman

2015 is a pretty awesome year to be a woman in the western world.

We have the right to education, non-domestic employment, equal treatment, and endless selfies on Instagram (shameless - follow me @danaikadzere).

How else are we immortalize the perfect lashes?
With all that we can do, and a great big world of opportunity out there for all of us, it's no wonder that our schedules are more packed than ever!

So how does one best balance a young professional's schedule with a love of baking, homemaking, and all things cute?

                         

By hacking life!

Today's hack focuses on how to optimize your kitchen time to make baking and cooking (baking is my favorite) even more enjoyable, as well as more practical for our busy lifestyles!

Big batch bake.

This one is actually more relevant for cooking (though it works for baking. as well) but I wanted the alliteration. Because alliteration is like...

...anyway, doubling a recipe is generally just as easy as making a single batch of the same recipe. It certainly won't be double as time-consuming, even if it does take a little extra time!

No one wants to eat the same lasagna day in and day out for weeks at a time (at least, I don't), but if you make a large batch at once and freeze it in single or double portions (time to hit up a tupperware party!) you can enjoy it for months to come, but only when you want it!

It's also a perfect strategy for when life gets a little to crazy for cooking and being fabulous. (Redacted, because life is never too busy for being fabulous).

Especially if you have roommates you have to share freezer space with, investing in an extra freezer (a single chest freezer starts as low as around $100, possibly less if you shop on one of the major sale holidays) could be well worth it.

Multitask.

We are all expert multitaskers already, but multitasking isn't just for the office. You can multitask in your downtown without adverse effects!

I don't mean literally do a million different things at once and not enjoy any of them, because we all already do to much of that, too. But there are some great ways to multitask without decreased benefit!

One of my favorite kitchen multitasking ideas is that I love to bake sourdough bread when I'm feeling a little frustrated or stressed out. Kneading (and, let's be real, punching) the dough is great way to calm down and get an arm workout at the same time, all while making breakfast!

Win.

Use Whole Wheat Pastry Flour.

Seriously, if you've never baked with whole wheat pastry flour, you need to try it! It works just as well as all-purpose flour (1:1 substitution) and it has all the vitamins and minerals of whole wheat flour. Optimal nutrition helps you achieve optimal performance in whatever it is that you do!

Normal whole wheat flour doesn't substitute as well in many recipes, because the coarser flour doesn't rise as well and imparts a hearty, nutty taste, but whole wheat pastry flour is much milder in flavor and produces a soft, light result comparable to all purpose flour!

Baking is very fun and pretty much anyone can learn how to do it. I suggest starting simple. Think chocolate chip cookies as a starter recipe, rather than a fancy souffle, and you're already on the right track!

While the holidays get a bad rep for being a multi-week (and, for some, multi-month) health wrecker, they can actually be a great time to take care of yourself and take steps to being a healthier and happier you!

Maybe it's an immigrant thing, or maybe it's because I have the dictionary definition of an African dad, but I have always been very driven to succeed - and sometimes at the cost of my health. I grew up with my dad's favorite rhyme, 'good, better, best/ never, never rest/ until the good is better and the better best,' as a personal motto. But what does that boil down to? Never rest.

 

While it's great to push yourself to succeed and be a hard-worker (and, believe me, I wouldn't have achieved half of the things that I have or gotten a degree from Harvard, financed largely by outside academic scholarships, without that drive and self discipline), you also do need to breathe sometimes.

I eventually realized that sleeping three or four hours, tops, a night was likely related to my chronic stomach ailments and general waning health and well-being. I took advantage of the holiday break a few years ago to seek balance - part of which was aiming for at least seven hours of sleep a night, even if that meant I couldn't do everything. But I'm so much happier and healthier now, because of it!

Best Thanksgiving Desserts of 2014

Potluck style Thanksgiving dinners are the best for a number of reasons.

It's fair division of labor, so everyone has some fun cooking, but no one's completely exhausted by dinner time.

It's fair division of costs, since everyone ends up buying some ingredients, but no one is saddled with the cost of creating an entire multi-course Thanksgiving dinner for X number of people.

It's a fair division of effort, so everyone has time to sleep in and take it easy on Thanksgiving morning, and no one is forced to get up at the crack of dawn to get to work in the kitchen.


But, quite honestly, my favorite thing about potluck Thanksgiving dinners is that I can claim volunteer for dessert. I love making desserts, they're so fun!

It's the walnut crumb topping that really makes it (though I'd still serve it with ice cream, instead of whipped cream, because ice cream is always the best with pie - period).

Lactose-Free Sleepover Treats

My little sister's neighborhood best friend is a sweet bundle of energy with a high pitched scream and a face made for Elsa (of Frozen, of course) make-up.

But she's also lactose intolerant and a ten-year-old - so sleepover eats? Not as easy as they could be. And then the kids are hungry and looking at you and you don't know what to make and it's like:


But it doesn't need to be overwhelming!

Soymilk is a great sub for dairy milk and it's free of lactose, vegan-friendly, and every bit as delicious.

We've been craving chocolate Silk in my family since long before we discovered that my stomach upsets were partially dairy-based and long before my darling little C had her first sleepover.

Soymilk is also really nutritious.

There are a lot of benefits of drinking soymilk and eating soy products regularly. They're especially well known for menopausal woman - the phytoestrogens are great for dealing with the symptoms of decreasing estrogen.

But there are benefits for soy-consumers of all ages! And I even cited my sources because (a) I'm a nerd and (b) I know your kids' (and your) health is important enough to you that you want claims people can back up in fact. So: SCIENCE.



Improve your lipid profile.

Soy fat is healthy with zero cholesterol and mostly unsaturated fatty acids. Regular intake of soy can significantly lower triglycerides and low density lipoproteins (LDL) while raising healthy high density lipoprotein (HDL) levels!

Promote a healthy weight.

Soymilk has a lower sugar content than dairy milk and is lower calorie, higher in fiber, and the monounsaturated fats in soymilk can inhibit intestinal absorption of fat, making the rest of your diet lighter, too!

Prevent Prostate Cancer

There's some evidence that the same phytoestrogens that help ease the menopausal process for women can help prevent prostate cancer in men!

Prevent osteoporosis.

Don't worry, guys - your kids (and/or you) won't get the benefits of soy at the expense of the bone-strengthening benefits of dairy. Soymilk not only has calcium, but Silk soymilk is even fortified with extra calcium and vitamin D.

I wouldn't necessarily go with just any random brand of soymilk, especially if you're feeding it to picky-eater kids, because some brands can separate or have awkward tastes or textures. Silk is smooth and creamy and absolutely delicious, though, so it's our staple and the first one that I look for when I'm on a lactose-free mission.

Anyway, here's a recipe round-up of some great lactose-free treats to serve up at your next sleepover with allergies/intolerances - or just your next sleepover, period!



This first one is bound to be a hit with the blogosphere folks because it's lactose-free, dairy-free, and gluten-free (covering a lot of allergy and intolerance bases!)

Okay, this next one is only a go if you have really adventurous eaters, because there's no way to hide that it's...different.



Yup. They're green.

But it's all about creative marketing! Sell them as Grinch pancakes (if it's near the holidays) or monster pancakes (if it's not) and your adventurous eaters will love every bite!

In case you still want to celebrate fall at your sleepover, but pumpkin's not an option - apple awesomeness!

This one is really great if you have kiddies who can't sit still for more than five minutes. Muffins are relatively mess-free and portable!



Maybe you're hosting a little epicurean or maybe just the daughter of The PTA Mom - you know the one. She rocks at parenting, kicks butt at life, and never misses an opportunity to point it out.

Show her where she can stuff her bake drive organic speculaas cookies with these vegan danishes!

Just kidding. Let's all be friends.

Anyway, dairy-free clearly doesn't mean delicious-free. All of these recipes get a big thumbs up from me (21 years old), little C (9 years old), and mom (forty-something years old, but don't ask - that's rude). That's approximately three generations of approval!

Valentine's Day Recipe Ideas!

There are plenty of wonderful things to do on and for Valentine's Day! Depending on your relationship and preferences, it can be fun to go to the movies, go out to eat, take a long weekend, enjoy some theater, stay in and cook, etc.

The best part is that it's more of a flexible weekend of showing appreciation for the special person in your life than a set in stone one fixed day - especially when it's on a weekend/Friday, like it is this year!

In case you're busy on Friday or have other plans that night, meeting up to prepare and share a romantic breakfast together on Saturday can be a great option.

Plain Pancakes with Honey and Heart Shaped Fruit


It's lovely and not too much more difficult than regular pancakes, other than that it requires more time to cut the fruits properly. But if you're doing it together, it can be fun! Just definitely don't prep the fruits (at least not the bananas) ahead of time - they'll brown and that's just not as appetizing.




It incorporates asparagus, in case you want a little aphrodisiac in your breakfast!


Lemon Cheesecake Pancakes

They're cut pretty - and so delicate and fruity! I definitely recommend the lemon garnish - lemon is also great for cutting the sweetness of the cheesecake pancakes.



This recipe has asparagus (an aphrodisiac) and bacon (man's aphrodisiac?) so it's sure to please. Eggs also make for good staying power, so you'll have energy to do other fun things, like stroll or take a class, all day!

Berry Yogurt Crunch 



Though seemingly less impressive than the others, this would be my favorite breakfast. Or, even better, a picnic of fruits, yogurt, cereal, and trail mix. 

Though it's a little cold for a picnic...unless it's a couch picnic or you live near the equator?

Still, that just goes to show that the perfect gift depends on the gift recipient. Sometimes thought does count for something!

Why I Love Le Pain Quotidien

Le Pain Quotidien is probably one of my favorite chains - I get a little happy whenever I find one near me in a new city and I've never had a bad meal at a Le Pain Quotidien.

Here's why I love them!

1) Everything always smells and looks so fresh and so good.

They use simple, fresh ingredients to create wholesome meals fit for omnivores, vegetarians, and even vegans (the menu has something for everyone).


Their tartines are almost too photogenic to eat.

2) The environment is cosy, comfortable, and not at all stiff.

Whodathunk a French place would make people feel comfortable? I suppose the French love of good food (which necessitates good atmosphere) precludes the otherwise anticipated haughtiness.

3) They offer baking classes...

Baking is SO fun.

Sadly for my mom, this is a fairly accurate depiction of how both her kitchen and I look whenever I go baking crazy when I'm home for the holidays.
I think it's great that they encourage people to give it a go, even though they stand to profit more if people and can't bake and must thus visit their cafes to eat tasty things.

4) ...and they actually share their recipes online.

Including for such unique foods as Olive Shortbread Cookies!


5) Bread.



I'm half-German. 'Nuff said.
