Want a muffin recipe that will make everyone want to have breakfast at your place? These blueberry muffins are it!
Perfectly soft and fluffy on the inside and crunchy on the streusel-covered top, they're melt-in-your-mouth amazing. To make them just like jumbo bakery muffins, use 6 extra large muffin tins instead of 9 regular ones. Enjoy!
Best Ever Blueberry Muffins
Makes 9 large muffins (or 6 jumbo ones)
Batter:
* 1.5 c. all-purpose flour
* 3/4 c. white sugar
* 1/2 tsp. salt
* 2 tsp. baking powder
* 1 egg
* 1/3 c. vegetable oil
* 1/3 c. buttermilk (whole milk is fine if you're out)
* 1/2 tsp. vanilla extract
* 1 c. fresh blueberries (not frozen!)
Streusel:
* 1/2 c. brown sugar
* 1/3 c. all-purpose flour
* 1/4 c. butter, softened
* 1.5 tsp. cinnamon
1) Preheat the oven to 400F (200C). Grease or line (for easier clean-up) 9 muffin tins (or 6 jumbo ones for jumbo bakery-style muffins).
2) Combine the flour, white sugar, salt, and baking powder in a large mixing bowl. Mix well.
3) Whisk the egg, oil buttermilk, an vanilla in medium mixing bowl.
4) Pour the egg mixture into the flour mixture and mix gently. Don't overmix or your muffins won't be as soft and fluffy.
6) Gently fold in the blueberries. Again, don't overmix!
7) Divide the batter evenly between the prepared tins.
8) Mix the streusel ingredients in a small mixing bowl. You can mix with your fingers if you want, to get a crumbly mixture! Sprinkle the streusel over the batter in the tins.
9) Bake in the preheated oven for 20-25 minutes, until a toothpick inserted into the middle of one of the muffins comes out clean.
10) Cool on wire racks.
