Eggplant parmesan with angel hair pasta!
Some like a little extra spaghetti sauce with their pasta, so make a little extra and save it to serve on the side. Other than that, it's straightforward and simple and makes great leftovers! Read on for the recipe.
Eggplant Parmesan
Serves 3
* 1 eggplant, peeled and thinly sliced
* Salt, to sweat eggplant
* 1 egg, beaten
* 1.33 c. Italian seasoned bread crumbs
* 2 c. spaghetti sauce, divided
* 5 oz shredded mozzarella cheese, divided
* 1/6 c. shredded parmesan, divided
* Dried basil, to taste
1) Salt the sliced eggplant and let it sweat in a coriander for 30 minutes.
2) Rinse the eggplant thoroughly and pat it dry with paper towels.
3) Preheat the oven to 450F. Line a baking sheet with aluminum foil.
4) Dip the eggplant slices in the beaten egg.
5) Shake the egg-coated eggplant slices together with the bread crumbs in a gallon bag, to coat.
6) Place in a single layer on the aluminum foil-lined baking sheet.
7) Bake in the preheated oven for 7 minutes, then flip the slices and bake for another 5 minutes on the other side.
8) Remove the eggplant from the oven and reduce the heat to 350F.
9) Line a 5" x 7" baking pan with aluminum foil.
10) Cover the bottom of the pan with some of the spaghetti sauce.
11) Lay a layer of eggplant slices over the spaghetti sauce.
12) Top the eggplant slices with some of the mozzarella cheese and some of the parmesan cheese.
13) Repeat until you've used up all of the ingredients. End on a cheese layer!
Serve with angel hair pasta. Crusty garlic bread is also a great companion, as is a simple green salad.
