Recipe - Best Whole Wheat Chocolate Chip Cookies EVER

I know you're all groaning and rolling your eyes - another chocolate chip cookie recipe? Chocolate chip cookie recipes are about as welcome as dust bunnies or fridge magnets.

But I promise this one is different. 

These cookies not only taste so amazing that everyone I've shared them with instantly dubbed them their new favorite chocolate chip cookies, but they're made with heart-healthy coconut oil (awesome for your skin, too) and are 100% whole grain!

Without further ado, here is the recipe!

Best Whole Wheat Chocolate Chip Cookies EVER
Makes 12 large cookies

* 0.5 c. Nutiva Coconut Oil
* 0.75 c. granulated sugar
* 1 egg
* 1 Tbsp. vanilla extract
* 1 c. whole wheat pastry flour
* 0.5 tsp. baking powder
* 0.75 tsp. baking soda
* 0.25 tsp. salt
* 2 c. semi-sweet chocolate chips

1) In a large bowl, cream the coconut oil and sugar on medium-high with your hand-mixer.

2) Add the egg and vanilla, beat well.

3) Beat in all remaining ingredients, except the chocolate chips.

4) Stir in the chocolate chips with a wooden spoon, don't over-mix.

5) Roll into 12 equal sized bowls and refrigerate overnight (or at least 2-3 hours, if you're in a rush). This step is really important, don't skip it!

6) Preheat oven to 350f and grease two large cookie trays.

7) Place 6 balls equidistant on each sheet, with at least about 2 inches between them. There will be some spread and you want distinct cookies, not one massive rectangular cookie!

8) Bake one sheet at a time in the center rack of your oven, for 12-15 minutes. 13 was the magic number for me, but don't bake longer than 15 minutes unless you made larger cookies. The cookies may not look completely done in the center, but will continue to bake a bit as they cool on the hot baking sheet!

9) Cool on the baking tray for 10 minutes. Remove to a wire cooling rack.
