Recipe: Baklava Salmon

Need something healthy and delicious to serve your guests (or just yourself) for dinner? Salmon is full of heart-healthy fats and muscle-building, energy-level sustaining protein!

There are many great ways to serve salmon, from grilled to baked to smoked and so on, but here's a new, fresh way to enjoy it! Baklava salmon takes less than 30 minutes to make and is mostly savory, but slightly sweet, making it a fun switch-up from your usual ways of serving salmon.

I served it with oven-roasted Greek potatoes (recipe to come soon!) and avocado with freshly squeeezed lemon juice and salt and pepper sprinkled on top.

Without further ado, here is the recipe!

Baklava Salmon
Serves 2

* 2 4oz wild Alaskan salmon filets
* 2 Tbsp. unsalted butter, softened
* 1.5 Tbsp. dijon mustard
* 0.75 Tbsp. honey
* 2 Tbsp. Panko
* 2 Tbsp. chopped walnuts
* 2 tsp. dried parsley
* salt and pepper, to taste

* Opt: 2 wedges of fresh lemon

1) Preheat the oven to 400F and line a baking sheet with aluminum foil.

2) In a small mixing bowl, mix the butter, mustard, and honey.

3) In another small mixing bowl, combine the Panko, walnuts, and parsley.

4) Place the salmon filets on the aluminum foil-lined pan.

5) Sprinkle the filets with salt and pepper, then brush with the honey-mustard-butter mixture.

6) Sprinkle the walnut-breadcrumb-parsley mixture on top of the filets and press any extra into the sides of the filets.

7) Bake in the middle rack of the preheated oven for 13-15 minutes, until the fish flakes easily with a fork.

Serve with a wedge of lemon on the side, to squeeze on top!
