Recipe: Easy Irish Soda Bread

It's still a long time until St. Patrick's Day, but Irish Soda Bread is a delicious breakfast or snack bread for any time of the year!


It's like the love child of a regular loaf of bread and a scone. It's sweet, it's dense, it's absolutely delicious!

This recipe is so delicious that it doesn't require much of an introduction. Read on for the super easy, quick recipe for this amazingly delicious loaf. Then you can taste it for yourself!


Easy Irish Soda Bread
Makes 1 Loaf

For dough:
* 4 c. all-purpose flour
* 1 c. raisins or craisins (I used craisins here, but raisins are more traditional)
* 6 Tbsp. white sugar
* 2 Tbsp. caraway seeds
* 1 Tbsp. baking powder
* 1 tsp. baking soda
* 1/2 tsp. salt
* 1/2 c. butter, softened (melted is fine, too)

* 1 c. buttermilk
* 1 egg

For wash:
* 2 Tbsp. buttermilk
* 2 Tbsp. melted butter

1) Preheat oven to 350F. Line a cookie sheet with parchment paper.

2) In a small bowl, mix together the 2 Tbsp buttermilk and the 2Tbsp melted butter for the wash. Set aside.

3) In a large bowl, mix together the flour, raisins/craisins, white sugar, caraway seeds, baking powder, baking soda, salt, and softened butter. Mix well. 

4) Stir in the buttermilk and egg. Combine well.

5) Turn the dough out on a floured surface and knead a bit. Form into a loaf and place it on the parchment paper-lined cookie sheet.

6) Cut an 'X' on the top of the loaf. 


7) Brush the loaf with half of the wash.


8) Bake in the preheated oven for 60 minutes, or until a toothpick poked into the center of the loaf comes out clean. Midway through, brush the loaf with the other half of the buttermilk-butter wash.

9) Cool on a wire rack. 


10) Slice and enjoy!

If your  loaf is browning too quickly, tent with aluminum foil. Store the loaf in the fridge. It's great either fresh and warm, straight out of the fridge, or toasted! 

I've never tried it for french toast, but I could imagine that would taste good, too. If you try making french toast with this loaf, please let me know how it turns out for you!
