Recipe: Ooey Gooey Chocolate Chip Cookies

I love trying out all sorts of different cookie recipes and cookies around the holidays. There are so many fun varieties!

But when it comes down to it, you can't beat the nostalgic appeal of the classic chocolate chip cookie around Christmastime.

This is the only chocolate chip cookie recipe I use anymore! The cookies are amazing and everyone loves them.

Everyone.

Read on for the recipe. You'll be glad that you did!

Ooey Gooey Chocolate Chip Cookies
Makes 24 cookies

* 1 c. butter, melted
* 1 c. packed brown sugar
* 1/2 c. white sugar
* 1 egg
* 1 egg yolk
* 1 tsp. pure vanilla extract
* 2 c. all-purpose flour
* 1 c. uncooked oats
* 1/2 tsp. baking soda
* 1/2 tsp. salt
* 1/4 tsp. cinnamon
* 1 c. white chocolate chips
* 1 c. chocolate chips
Optional: 1/2 c. chopped pecans (walnuts would probably be great, too, but I've only tried pecans so far)

1) Mix together the butter and sugars, stirring well until smooth. Chill the mixture for ~10 minutes.

2) Mix in the egg, egg yolk, and vanilla.

3) Add the flour, oats, baking soda, salt, and cinnamon. Don't over-mix!

4) Gently fold in the chocolate chips and optional nuts, if using them.

5) Roll by hand into 24 evenly sized balls and chill overnight in the fridge, or for at least one hour.

6) Bake at evenly spaced intervals on parchment paper-lined cookie sheets for 12-14 minutes, until lightly golden.

7) Remove to a wire rack to cool.

Enjoy!
