Recipe - The "Best Pancakes Ever"


These pancakes are, according to both of it taste testers (a middle aged woman and a rambunctious ten year old), the "best pancakes ever."


They're really easy to make, use only basic ingredients that can be found in most kitchen pantries, and are absolutely fluffy and perfect!


The Best Pancakes Ever
Serves 3

* 0.75 c. milk
* 2 Tbsp. white vinegar
* 1 c. all-purpose flour
* 2 Tbsp. white sugar (brown sugar works in a pinch, I've tried it both ways with success!)
* 1 tsp. baking powder
* 0.5 tsp. baking soda
* 0.5 tsp. salt
* 1 egg + 1 egg white
* 2 Tbsp. margarine, melted (also works with butter, it just takes a little longer to melt)

* Oil, for the pan

1) Mix the milk and white vinegar in a small bowl and set aside for five minutes, to 'sour.' It won't fully curdle, but it will look/smell a little off. That's what you want!

2) Combine all the dry ingredients in a large bowl. 

3) Whisk the melted margarine and the egg into the soured milk.

4) Pour the wet ingredients into the dry ingredients slowly, whisking as you do. Mix well, until clump-free, but don't over-mix.

5) Heat oil in a large skillet pan over medium-high heat. Ladle 0.25 c. of batter onto the hot oil. Cook for about 2 minutes, until the edges are set and the center is bubbly. Flip and cook for another two or so minutes, until both sides are golden brown.

6) Repeat with the remaining batter, adding more oil to the pan as needed.


Enjoy!

At our house, we love topping these with maple syrup, peanut butter, and/or whipped cream. Sliced bananas, Nutella, jam, or whatever else you like works, too!


Feel free to add sprinkles to the batter for confetti pancakes, food coloring for festive pancakes, chocolate chips or blueberries for special pancakes, etc. This recipe is a great base for customization!
